Start by slicing lemons evenly into rounds, aiming for a thickness between ⅛ to ¼-inch, which typically yields about 8 slices per lemon, depending on their size.
Arrange the slices on a metal cooling rack placed over a baking sheet, or use a baking sheet lined with parchment paper.
Set your oven to its lowest temperature (around 170ºF/77ºC for most ovens) and bake the lemon slices for 4 to 5 hours, or until they are completely dried.
